On my recent trip to Puerto Rico, I discovered not only some great coffee, but a very delicious holiday cocktail called coquito. Often referred to as Puerto Rican eggnog, this creamy drink is made up of lots of coconut milk, cinnamon, and white rum all blended together. If you like Bailey's Irish Cream, you'll love coquito.
The first time I tried coquito the flavor and texture was so delicious I ended up drinking a few glasses not realizing it contained an immense amount of alcohol :) I wanted to create a virgin (alcohol free) version of this delicious drink and add what I knew would make it perfect... a shot of espresso!
The coquito and coffee combination tastes so good! It's refreshing, coconut-y, and tastes like Christmas on the beach. I can't wait for you all to try it and share with your friends and family this holiday season! And if you're 21 and over, try it spiked with white rum!
COQUITO LATTE RECIPE
Step 1: Go to your Abuela's house and ask her for her coquito recipe. Luckily, I've done this step for you (as seen above, a socially distanced way of getting recipe from Abuela)
Step 2: Prep your ingredients. Prep time: 5 min. Yields 8 portions
- 2 cans of evaporated milk
- 1 can coconut cream
- 1 can of coconut milk
- 1/2 cup condensed milk
- 1/2 teaspoon ground cinnamon
- Your Adventure Coffee Blend
- White rum (optional)
Step 3: In a blender, combine evaporated milk, coconut cream, condensed milk, coconut milk, ground cinnamon and rum (optional). Blend on high until mixture is combined for 1-2 minutes.
Step 4: Prep your coffee! Using an espresso machine or a mocha pot, prep one shot of espresso.
Step 5: Pour your coquito into a glass (add ice if desired) and pour your shot of espresso on top. Garnish with some cinnamon (or coconut flakes), add your own holiday spin to the garnish and serve!

Try it hot!
Steam your coquito or warm it up on the stovetop and pour it over your coffee. Add some whipped cream, cinnamon and enjoy!
